Summary
LEMONGRASS and kaffir lime leaves give this soup a wonderful, almost perfume-like fragrance and a fresh flavour. The chilli (we use dried Thai chillies that are about 7-10cm long and are actually quite mild) is removed before serving and adds just a hint of spiciness without any real heat.
If you're not familiar with kaffir lime leaves, they are available dried from stores specialising in Asian foods or fresh in small packets in larger supermarkets.
